GREEN CHUTNEY RECIPE
Green Chutney is one of the tasty and healthy indian chutney (dip) recipe.This chutney is made with 2 type of herbs with green chili . It is used in so many Indian street foods like vadapav, sandwich and chaat . It is served with samosa, pakodi and papadichaat too .It is as tasty as healthy . It will helps to digest food easily.
So let's start how to prepare.......
INGREDIENTS
- Coriander leaves (Dhania): 2 cups (fresh, tender stems included)
- Mint leaves (Pudina): 1 cup (leaves only, stems removed)
- Green chilies: 2 to 3 (adjust to taste)
- Ginger: 1/2 inch piece
- Lemon juice: 1 to 1.5 tbsp
- Cumin powder (Jeera): 1/2 tsp (roasted preferred)
- Black salt (Kala namak): 1/2 tsp
- Regular salt: To taste
- Ice cubes / Chilled water: 2 to 3 ice cubes or 2 tbsp chilled water
Preparation Steps
- Wash thoroughly: Rinse coriander and mint leaves in cold water to clean off all sediment.
- Blend: Add coriander, mint, green chilies, ginger, roasted cumin powder, black salt, and regular salt into a blender jar.
- Keep it green: Add the ice cubes or cold water along with the lemon juice before blending. (The cold temperature and lemon juice prevent the herbs from oxidizing and keep the color vibrant green).
- Purée: Pulse until smooth, adding minimal water only if needed to move the blender blades.
- Store: Transfer to an airtight glass jar. Keeps well in the refrigerator for up to 5 days.
Tips for Best Results
- Color preservation: Adding 1-2 tbsp of thick yogurt (curd) or a small piece of raw mango instead of extra water adds creaminess and helps maintain a bright green hue.
- Thick consistency for sandwiches: Add 1 tbsp of roasted chana dal (dalia) or peanuts while blending to make the chutney thick so it doesn't make sandwich bread soggy.
