Vegetable Pulao Recipe in Pressure Cooker
A classic, one-pot Indian meal made by cooking aromatic Basmati rice, mixed vegetables, and whole spices under pressure in ghee or oil. It yields fluffy, non-sticky rice infused with warm spices like cinnamon, cloves, cardamom, and cumin.
This vegetable pulao recipe, made in a cooker, is perfect for a quick rice dish. Combining rice and vegetables, pulao is popular in India. Unlike traditional methods that take time, this version uses a pressure cooker to save time.

Veg Pulao Ingredients
- Rice (any) 400g - 2cup
- Carrot 1cup chopped
- Beans 1 cup chopped
- Onion chopped 1 big
- Greenpeas 1 cup
- Ginger chopped 1inch
- Ghee (clearified butter) 1tbs
- Chilli powder 1 tablespoon
- Turmeric powder 1 teaspoon
- Salt as per taste
- Cardamom 3
- Cinnamon 1piece
- Cloves 2
- Cumin seeds 1tbs
- Water 5cup
Preparation Method
- Wash properly all vegetables, cut into 1 inch pieces.
- Wash rice properly
- Heat a cooker and put ghee
- Add bay leaves, cumin, cardamom, clove
- Saute for a second and add chopped onion
- Fry for 1 mins
- Add all vegetables and salt
- Saute for 2 mins or cook for 3mins
- Add washed rice, chilli powder, Turmeric powder
- And water
- Boil for 5 mins, if you see little boil in the water
- Close lid and whistle for 3 or cook for 10 mins
- In medium flame
- Rest for 5 mins, open lid and serve hot with curd, pickle or as you want
Impotent Notes :-
- Take water just double from rice and extra 1 cup for vegetables
- After cooking don't open lid instantly, rest for 5 mins then open
- You can add extra vegetables and peanut
